Shrimp Lime Soup

ស្ងោរជ្រក់បង្គារ - {Sngoa Chruok Bongkea}

This is a kind of Cambodian soup that is fast and simple to make. Lime juice, galangal, lemongrass and kaffir lime leaves add aromatic flavour to the soup and make the shrimps burst with flavour whilst being extremely refreshing.

Ingredients - Serves 4 people
  • Jumbo shrimps (butterfly or take digestive track)- 600g
  • Straw mushrooms/Oyster mushrooms – 200g (optional)
  • Lime juice from - 4 limes
  • Lemongrass (2 slightly smashed and 2 shinly sliced)
  • Kaffir lime leaves (thiny sliced) - 5 leaves
  • Galangal (sliced) - 4-5 pieces
  • Garlic (slightly smahed) - 2 cloves
  • Salt - one teaspoon Sugar - 1 and 1/2 teaspoon
  • Fish sauce Knor (optional) - 1/2 teaspoon
  • Basil: 10 leaves
  • Saw tooth basil: 4-5 leaves

Bring 1 liter of water to the boil in a large pot
Add garlic, galangal, and lemongrass to the boiling water for 5 minutes. After 5 minutes remove 50 % of the chopped ingredients from the pot. Put mushrooms in boiling pot for about 3 to 5 minutes and add the shrimps in than add salt, sugar, and fish sauce in and keep boiling for two minutes. Turn the heat off and add lime juice, lemongrass and kaffir lime. Serve the soup in a bowl and garnish with basil and saw tooth basil. To serve: Steamed rice on plates, fresh cut chilis with fish sauce in a small sauce bowl and shrimp lime soup in a large serving bowl.
