If you want to cook a delicious dessert and also full of nutrition, Bor Bor Domlong is the one. It’s creamy, sweet, crunchy but also melts in your month. I first heard about it as a vegetarian dessert which to me doesn’t make much sense at all because desserts are supposed to be vegetarian anyway. Then I realized that the nutrition contained in this dessert makes it so popular with vegetarians and that's why they cook it very often. In Cambodia, we have Chinese and Vietnamese communities and they practice Buddhism more strictly so they eat no meat. This dessert is one of many creative and delicious dishes they cook.

Ingredients -
  • Sweet potato: 200g
  • Taro: 200g
  • Pumpkin: 200g
  • Corn: 200g
  • Carrot: 100g
  • Shredded coconut meat: 100g
  • Cloud ear mushroom: 20g
  • Coconut milk: 2.5 cups (pure)
  • Sugar: 200g
  • Salt: 1/2 teaspoon

Sweet potato, pumpkin, carrot, and taro: peel off, wash then chop into one centimeter cub then keep separately.
Corn: cut meat out from cob
Cloud ear mushroom: soak in warm water for 10-15 minutes, wash well and cut into shred.
In medium side pot, put 1 cup fresh water and 1.5 cups of coconut milk in and bring up boil. Place carrot in and cook for 4-5 minutes and add pumpkin, taro and sweet potato in for another 3 minutes. Then put mushrooms, corn and shredded coconut meat in. Put sugar and salt in, stir well and wait until boil and add last cup of coconut cream in stir again and turn heat off.
To serve:
Spoon dessert in a bowl and serve.
